Why we love it: Because it’s the easiest way to get your daily dose of vegetables while enjoying a tasty lunch or dinner.

The main ingredient is the avocado, so don’t skip it. It will give a creamy texture to the dish, aromas and an interesting taste.

What you will need:

  • 1 1/2 tablespoons of yeast
  • 1 bunch basil
  • 1 handful of other mild herbs such as spring onions, parsley, cilantro, etc.
  • 1/3 cup tahini
  • 1/4 cup apple cider vinegar
  • juice of 1 1/2 lemons
  • a spoonful of honey
  • to taste
  • 1-2 tablespoons of water to thin the dressing as needed
  • 250g of fresh spinach
  • 500g of pasta
  • a cucumber, an avocado, two boiled courgettes, ready peas

How to make it:

  1. Fill a large pot with salted water. While the water is heating, put the yeast, basil, fresh herbs, tahini, apple cider vinegar, lemon juice, honey and salt and pepper in the blender.
  2. Once the water boils, add the spinach and blanch until the leaves turn pale green. With a strainer, take the spinach out of the pot and run it under cold water. You can also add raw spinach to the blender, but you can also blanch it.
  3. Add the pasta to the water and cook according to package directions.
  4. Drain the pasta. Add half the dressing to the pasta while it is still hot and toss to combine. Let the pasta cool.
  5. Cut the vegetables into small cubes as needed.
  6. In a large serving bowl, put pasta that you have ready, the vegetables and the rest of the dressing and mix to combine. Add lemon juice, salt and pepper.
