Biryani with cauliflower, a dish full of fiber and anti-inflammatory spices

by

Biryani is an Indian rice dish with vegetables, spices and often protein.

The secret to a good biryani lies in the spices. In addition to garam masala, cumin, turmeric and cayenne pepper, you can add ginger and chopped garlic.

Although the purpose of spices is to make the dish delicious, they ultimately help protect the body with their anti-inflammatory properties.

What you will need:

2 tablespoons coconut oil

1 large onion, cut into cubes

Salt

4 cups grated cauliflower

2 cups mixed vegetables (frozen or fresh green beans, carrots and peas)

1 tablespoon grated ginger

1 tablespoon grated garlic

1 tablespoon coriander powder

1 teaspoon garam masala

1 tablespoon cumin powder

1/2 kg cayenne pepper

1 teaspoon turmeric

For garnish:

1/2 cup coriander, finely chopped

lemon slice

How to do it:

Melt two tablespoons of coconut oil over medium to high heat in a large saucepan with a heavy bottom.

Add the chopped onion with salt and sauté until well browned.

Add the grated cauliflower and stir until the water evaporates. Add the vegetables, ginger, garlic and spices and cook until soft.

Garnish with coriander and lemon.
