Napolitan pizza became the darling of the paulistanos. But the truth is that few new pizzerias top up all prerequisites to get Italian certification. Most choose to adapt or modernize the preparation, which opens new possibilities for ingredients and flavors.
This is the case of Basilic SEO, with two houses in São Paulo. The first, in Mooca, opened four years ago, and another recently inaugurated in Perdizes. There, the way was settled.

If chef Vinicius Braune strictly followed tradition in search of the authenticity seal, he might not have ventured into bolder pizzas, such as Mortadela and Limone (R $ 57). Combining mortadella, ketilian lemon, fior di latte, pistachio and basil, is one of the menu’s successes.
The choice of fior di latte, soft cheese made with cow’s milk, shows that the Neapolitan soul is there. The characteristic of the mass, more elastic, too. To take the test, just sink your finger on the edge, full of air.

It is a bianca pizza, without tomato sauce, but it arrives too greasy, and the result is nauseating. Peperoni (R $ 59) is tasty and, even with cured meat, can eat the whole pizza without weighing in the stomach.
Finally, Cannoli (R $ 18). Stuffed with ricotta, lemon-siciliano and pistachio, is very light and tasty. Honor the Juventus Flam (Cannoli fans will understand!) Hanging near the entrance. The only defect is to come one.
The service is attentive, but a little inattentive. A water had to be requested three times. Anyone who wants to observe the preparation of the pizza can touch the counter. Like Hobbie, partners Vinicius Braune and Leandro Ferrari made pizza at home only with these ingredients in a portable oven, and called their friends to prove. It was so successful that it ended up becoming a deal.
And successful business. The brand intends to open a unit in Florida, in the United States, in the coming months. Another in Portugal is also in the plans.
