With less than ten ingredients you will have a wonderful pasta for dinner. The fish sauce is optional it just gives extra flavor
What you will need for 4 servings:
1 tablespoon extra virgin olive oil
4 cloves garlic, peeled
1 can of tomatoes
Salt and freshly ground black pepper
1 teaspoon fish sauce
6 tablespoons unsalted butter, cut into cubes
500g boukatini (or other pasta)
Grated parmesan and salt, for serving (optional)
How to make it:
Preheat the oven to 200 ° C. Heat the olive oil in a cast iron pan over medium to high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the tomatoes and cook, stirring occasionally until simmering, about 3-4 minutes.
Season with salt and pepper and add the fish sauce, stirring. Add the butter, then transfer the pan to the oven and bake until all the sauce has set, for 40 to 45 minutes.
At the same time put a large pot with boiling salted water. Cook the pasta according to the instructions on the package, until it is al dente. Hold a cup of water and then drain the pasta with a strainer.
Add the pasta to the sauce with the pan back on the stove and add ¼ a cup of water to the pasta to bind the sauce to the pasta. You may need a little more.
To serve, add parmesan and a little extra salt.
