Meet 9 Bars from SP that offer drinks made with the ‘Fat Wash’ technique

The idea can cause ojeriza at first, as the act of mixing fat with your favorite drink may not salivate the city’s bars goers. But the reality is different, and the bold process favors the drink.

Despite the recent popularization, “Fat Wash” or “Fat Washing” is not new, and style cocktails mix from vegetable oils such as coconut, to animal fat such as bacon, one of the drinks of the drinks.

The ingredient can be added to vodka, gin, to a red and so on. The mixture is maturing for a period, is cooled, solid fat is removed, and the drink is still under another filtration before joining other components and going to the client’s glass.

Guillotine

The guillotine, who for years was among the best in the world, features Cipriani Martíni (R $ 63), a cocktail that uses “Fat Wash” of buffalo mozzarella made with gin, vodka, dry red, sherry and liquor Chartreuse Green. The drink is still finished with microwaves of tomato olive oil and basil oil.

The oriental footprint bar in the gardens region has cocktails signed by Argentina Inés de Los Santos, named after the Conchinchina Bar in Buenos Aires, who was on the list of the 50 best bars in the world. At Kotchi, the mixologist created O-Kare Fashioned (R $ 58), Bourbon drink in “Fat Wash” with butter with curry and saffron, sugar syrup and Angostura, and Diniz Negroni (R $ 58), rereading of this classic that mixes gin, lillet, japanese Shochu-and japanese Campari in “Fat Wash” of truffle oil.

Speakeasy keeps two cocktails with ingredients that passed the technique in the letter. The Amazon (R $ 52) is made with guava concentrate, floral syrup, Amaro Bianco, lemon juice, falernum (a kind of lemon liquor), jambu cachaça, sage and a gin with butter -made “fat Wash” (medicinal herb with analgesic properties). The Cerrado (R $ 59) takes tequila infused with bacuri pulp, cocoa honey, coconut sugar and “fat wash” coconut oil. The drink is cooked for an hour to 55ºC and then follows the process for removing fat when mixed with a Cold Brew.

TRINCA BAR & VERMUTERIA

The house uses reds on all drinks. Among the options with “Fat Wash” is the Negroni Trinca (R $ 42), which takes red red, gin, campaign, averna and “Fat Wash” of Chilean olive oil, and Super Hickory (R $ 44), with “Fat Wash” of Pamonha, Porto Tawny, White Red Wine, Italian Amaro and Bitter.
