From November 1st, establishments and industries producing ground beef will have new rules for selling the product. Among them, packaging the food immediately after grinding and selling in packages with a maximum weight of 1 kilo.
Establishments registered with the Ministry of Agriculture, Livestock and Supply will have one year to adapt and the deadline starts from November.

- Each package must have a maximum of 1 kilo
- You will need to refrigerate or freeze immediately after grinding the meat.
- Chilled ground beef should be kept between 0°C and 4°C
- Frozen ground beef will need to be kept at a maximum temperature of -12°C
- It is not allowed to scrape or grind bones or offal
- The use of industrial meat is prohibited
- The maximum percentage of fat must be informed on the main panel, next to the shelf
The determinations are in the technical regulation of Identity and Quality of ground beef approved and published in the Official Gazette of the Union by the Ministry of Agriculture, Livestock and Supply. The objective, according to the director of the Department of Inspection of Products of Animal Origin, Ana Lúcia Viana, is to ensure the quality of the product for consumers.
The product must contain exclusively meat, must not leave the grinding equipment at a temperature above 7°C and must be immediately subjected to cooling or rapid freezing.
“The use of industrial meat for the manufacture of minced meat and the obtaining of minced meat from the grinding of offal is prohibited”, says the ministry, in a note.
It is also prohibited to obtain ground meat from the grinding of meat obtained from scraping bones or obtained from any other mechanical separation process of bones.
The meat obtained from skeletal muscle masses will be a mandatory ingredient in the manufacture of ground beef from next month.
