Learn how to eat at the best restaurants in SP according to the 50 Best in Latin America

The capital of São Paulo is known for having great restaurants – and some of the best in Latin America.

The 2021 ranking of Latin America’s 50 Best –the regional arm of The World’s 50 Best, considered the Oscar of gastronomy– was released on Monday night (22), with many news. The organization was revamped this year and brought 100 restaurants, instead of 50 addresses as in previous editions, and was the result of a compilation based on votes from the eight editions of the award, which took place between 2013 and 2020.

Some addresses in São Paulo were already in the ranking, such as DOM (3rd), Maní (7th), A Casa do Porco (11th), Mocotó (23rd) and Evvai (65th).

But, with the expansion, new Brazilian restaurants gained space on the list and others were mentioned again. Among the debutants from São Paulo are Komah (88th), Arturito (86th) and Tordesilhas (75th). One returned, the Fasano (66th).

Two locations that closed their doors in the pandemic were remembered: Corrutela (90th), which also received the sustainability award, and Tuju (54th). The news is that both will reopen: Corrutela in December and Tuju in mid 2022, at a new address, as their old house now houses Tujuína.

D.O.M. (3º)

It was with this address that Alex Atala placed Brazil on the world gastronomy map. Its cuisine combines regional ingredients and techniques, especially indigenous ones, with references from international cuisine. The house reopened its doors in September, to serve tasting menus in 14 stages — the onslaught costs R$640 or R$990, with harmonization.

Peanuts (7th)

Well before replacing Paola Carosella at Masterchef in 2014, Helena Rizzo was elected the best female chef in the world by the organization of the 50 Best. At Maní, she presents an authorial and contemporary menu that highlights Brazilian ingredients. To get to know his work, the tip is the tasting menu (R$ 490, with ten steps) — but the house also has à la carte options.

The Pig’s House (11th)

With the change in organization of the 50 Best Latino, the address lost points in relation to DOM and Maní, but it is still the best positioned Brazilian in the current global list, in which it appears in 17th place. The restaurant’s pigs are self-bred and most of the vegetables come from the Rueda family farm in São José do Rio Pardo, in the interior of São Paulo, or from small partner producers. There, the best option to discover the cuisine is the tasting menu. Called Da Roça para o Centro, the meal costs R$185, in the traditional or vegetarian version. Another quicker and cheaper tip is to order a sandwich at the restaurant’s window, which serves a pick-up system and is open to Rua Araújo. The hot mixture, for example, has ham made by them.

Mocotó (23rd)

The space commanded by Rodrigo Oliveira is known for country cuisine and friendly prices. Among the dishes, the tapioca dice are famous (R$ 19.90, with six) — a recipe popularized by them, by the way. But there’s also baião de Dois (from R$21.90), string beans (prepared with gherkin, chayote, pumpkin and okra; from R$21.90) and more. Oliveira and historian Adriana Salay also received The Macallan Icon award for the social impact of the Quebrada Alimentada project.

Evvai (65º)

In 2017, Luiz Filipe Souza took over the kitchen that had been his tutor, the Italian Salvatore Loi, and opened Evvai. And, since then, it has been attracting attention — the place debuted in the 50 Best Latino in 2019, in 40th position, and was in 26th in 2020. In an elegant setting, Souza presents dishes based on Italian, but authoritative and highlighting national ingredients. It is possible to discover the kitchen of the house through the tasting menu in 12 steps (R$ 421). There are à la carte options for delivery.

Fasano (66º)

The firstborn of the haute cuisine brand, it works at the hotel with the same name. Under the baton of Luca Gozzani, the kitchen delivers dishes that have become classics in the house and others with a chef’s touch. It has three tasting menu options for R$360 –Pasta, Carne e Mare–, in addition to à la carte options.

Tordesillas (75º)

The restaurant, which turned 30 in 2020, offers Brazilian food. From the kitchen of Mara Salles, dishes such as pirarucu dumpling and cumari pepper from Pará (R$ 39), capixaba fish and shrimp moqueca (R$ 198 a large portion), barreado (R$ 79 per person), among others .

Arturito (86º)

Argentine chef Paola Carosella’s kitchen prioritizes the use of seasonal and small-scale food, which is why it is difficult to find the same dish twice. The preparation in the heat of a wood fire is another of the chef’s trademarks, who has already worked with the Argentinean Francis Mallmann, a reference on the subject.

Komah (88º)

In front of the kitchen, chef Paulo Shin prepares a short menu of Korean recipes. Among the suggestions are samgiopsal, a baked pancetta, glazed with a sweet and peppery gochujang sauce, and the galbi jim, a braised beef rib with soy sauce and ginger. A tip for getting to know the house is to try the degustation menu (R$115, with five stages).
