The secret; Boil and mash the potatoes before baking.
Serve with pico de gallo and hot sauce or sprinkle with grated cheese and sauteed bacon.
For about 6-8 servings you need 1 hour and a quarter and the following:
- 20 medium potatoes
- 1/4 teaspoon salt
- 2 tbsp olive oil, plus for pan
- ranch or taco seasoning, pico de gallo, cheese, bacon, fresh herbs, hot sauce, etc.
How to make it:
Put the potatoes in a large pot. Add enough water to cover them and bring to a boil. Add 1 tablespoon salt, reduce heat, and simmer until tender, 18 to 22 minutes. Drain.
Put the rack in the middle position in the oven and preheat to 200°C. Put a tray underneath and lay the potatoes on a non-stick paper.
Lay another sheet of non-stick paper over them and with your hand gently press each piece of potato if you break but do not crumble. Brush potatoes with 1 tablespoon oil and sprinkle with seasonings. Bake for 25 minutes.
Brush the potatoes with the remaining oil, then transfer to the upper rack and cook until golden brown and crisp, 4 to 7 minutes.
Sprinkle with salt. Serve as a side dish or with a dip of your choice.
