The anti-inflammatory properties of apple butter and how to make it

That apple butter or apple butter is the latest trend in food.

Think: A highly concentrated form of applesauce. It is perfect on a slice of toast or with a platter of cheeses and charcuterie.

The recipe includes six ingredients rich in flavor, fiber and anti-inflammatory ingredients. All have strong anti-inflammatory properties. For starters, cinnamon, where research shows that it is a powerful antioxidant and anti-inflammatory agent. Then apples with their fiber, cloves and nutmeg, rich in polyphenols, an antioxidant that helps reduce damage from free radicals.

In a recent @kalejunkie video, Nicole Keshishian Modic shows how to make an easy Instant Pot apple butter recipe in just 30 minutes and no fuss.

Modic starts by peeling six apples which she then cuts into large cubes. She pours all the ingredients—coconut sugar, cloves, nutmeg, cinnamon, vanilla extract, apple chunks and two drops of water—into the Instant Pot and gives it a quick stir. The mixture is then cooked in the Instant Pot for just 30 minutes. Once the cooking time is up, he uses a blender and works the ingredients into a cream.

You can store it in an airtight container for up to two weeks.

What do you need:

  • 6 large apples
  • 1/2 cup coconut sugar
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1 tablespoon of cinnamon
  • 1 tablespoon of vanilla extract
  • 1/4 cup water

How to make it:

  1. Add all ingredients to Instant Pot. Cover and close the valve. Cook on the “manual” setting for 30 minutes. Allow the natural release of steam.
  2. Blend using a blender or simply transfer to a blender and blend until smooth.
  3. Store in a covered container in the refrigerator for up to two weeks.
