Quiche with green onions and goat cheese – You will impress your guests!

To serve the quiche you can add peas and chopped pickled gherkins and a little lemon juice and olive oil

What you will need:

  • vegetables: 1 garlic clove, halved, 1/2 onion (diced), 1 small leek (thinly sliced), 3-4 spring onions, chopped, and 1 large potato, diced
  • sheet or crust or puff pastry
  • 2-3 tablespoons of grated parmesan
  • 4 eggs
  • 1 1/2 cups whole milk
  • 1 tablespoon soy sauce
  • freshly ground black pepper
  • 200 g goat cheese, crumbled

To serve: arugula, peas, pickled cucumbers, lemon juice, olive oil

How to make it:

  1. Preheat the oven to 190 degrees.
  2. We prepare the vegetables and put them in a pan, at a distance from each other, so that they have space to cook. Bake in the oven for 25-35 minutes, turning the vegetables halfway through. We can add the tender vegetables that need less cooking time, in half the time. When they are ready, take the vegetables out of the oven, set them aside and lower the temperature to 170 degrees.
  3. At the same time, we prepare the dish for the quiche. Butter and flour the pie pan and layer the sheets of dough until the pie form is covered. Bake for 10 minutes, sprinkle with parmesan and bake for another 5-7 minutes until the surface is well browned. Remove the crust from the oven and set aside to cool.
  4. While the crust is cooling, prepare the cream. In a large bowl, add the eggs, milk, soy sauce and pepper. Beat until they are homogeneous. We leave aside.
  5. Layer the vegetables and goat cheese in the pie pan. Pour the cream over the vegetables.
  6. Bake for about 40-50 minutes until the cream sets. Leave to cool until ready to serve.
