King buns, grated, glazed with dark and white chocolate, with chestnut and praline filling, but also king cakes with … French “culture” are ready to “star” from the first minutes of 2024 at all family dinner tables, in Thessaloniki.
More than 400 tons are fermented and expected to be sold from the bakeries and patisseries of the city, as the king pie is one of the most traditional customs, having a “hidden” flour inside for the lucky person of the year.
Both bakers and confectioners they have put all their passion and imagination into satisfying the taste buds of their customers, while keeping the prices at the same levels as last year. It is indicative that the king pies are sold from 13 to 18 euros per kilo, depending on whether consumers want the classic version or another, with filling and imaginative designs.
“The traffic in the bakeries has started and will peak during the weekend. It is a custom that is faithfully observed by the world and is a breath of fresh air for our stores. It is estimated that each of the 700 bakeries in the prefecture of Thessaloniki will produce around 400 kg of king pie, some colleagues maybe even more”, the president of the Thessaloniki Bakers Association “The Prophet Elias”, Elsa Koukumeria, told APE-MBE.
King pies have begun to smell musky in the city’s pastry shops. The “sceptres” of sales, as the president of the Thessaloniki Confectioners Guild reports to APE-MBE. Marios Papadopoulos, the classic vasilopita, a type of bun, holds on, although it has strong competition with all the others.
Next in sales are grated king cakes, while in smaller quantities cake-type king pies are chosen. However, many lovers of French culture who live in Thessaloniki choose to pre-order and ask the confectioners to make them a “Gallete des roi”, the pie of the kings. It is a pie with two puff pastry sheets containing a sweet almond cream.
“The pastry shops will produce about 100-150 tons of king pie. It is one of the sweets that is never missing from the New Year’s table. We offer our consumers a wide range of products, we create designs with inspiration, but the traditional king pie – tsoureki is always the one that wins” Mr. Papadopoulos concluded.
