The ultimate culinary accolade for a small restaurant in Mexico that only serves four types of tacos
A very small restaurant in Mexico which serves its customers traditionally taco (tacos) with four items on its menu it was awarded the coveted star Michelin.
It’s about her Taquería El Califa de Leónlocated in the San Rafael neighborhood of Mexico City, became the first taquería to do so.
El Califa de León is probably the smallest restaurant ever to receive a Michelin star. Half of the space is occupied by a grill while the rest is filled with standing customers holding plastic plates.
It has been operating for more than 50 years and is famous for Gaonera tacosnamed after the Mexican bullfighter Rodolfo Gaona.
“The secret is the simplicity of our taco,” chef Arturo Rivera Martínez, who has been serving customers at the tiny restaurant for more than two decades, told the AP.
“It just has a tortilla, red or green sauce and that’s it. That, and the quality of the meat.”
“This taqueria may only have room for a handful of people who can stand up and eat, but its creation, the Gaonera taco, is excellent dish» states the Michelin Guide in its recently updated version and adds.
“The thinly sliced beef tenderloin is cooked to order, seasoned only with salt and a squeeze of lime. At the same time, a second cook prepares the excellent corn tortillas, next door. The resulting combination is elemental and pure.”
In addition to the Gaonera taco, its customers can choose three other varieties of tacos which are bistec (beef steak), chuleta (pork steak) and costilla (beef rib).
When asked what drink he would suggest to customers to accompany the “excellent” tacos, the award-winning chef told reporters, and perhaps the only one: “I’d love it with a Coke.”
