On Cheese Bread Day, see different and stuffed versions of the delicacy in SP

A typical Minas Gerais delicacy, cheese bread is celebrated nationwide this Saturday, August 17. In the capital of São Paulo, cafes and restaurants add their own touches to the recipe, which include fillings such as stewed meat and kimchi or reinterpretations in the form of waffles and puff pastry.

Aizomê Coffee

Here, the savory snack gets a Japanese twist. The so-called mocheese is a cheese bread made with Serra da Canastra cheese, tapioca flour and mochi, a sticky rice ball. The creation is by chef Telma Shiraishi, served at the café on the ground floor of Japan House, on Paulista Avenue. A portion of 12 balls costs R$15.

The Baianeira

Run by Minas Gerais chef Manu Ferraz, the restaurant, which started with a cheese bread recipe, serves the delicacy with different fillings. Among them, stewed beef with free-range egg and zucchini vinaigrette with goat cheese. Prices vary according to the locations, in Barra Funda and MASP. Exclusive to the former is the cheese bread with creamy or cut cheese (R$18 and R$17), with dulce de leche (R$22), guava paste (R$22) and Almenara cheese (R$18).

Belo Café

The São Paulo branch of the restaurant has details that are reminiscent of its headquarters in Belo Horizonte, and although the menu has differences—such as lunch and dinner options—the stuffed cheese bread (R$26) has the same flavor. You can choose up to two fillings, but the combination of stewed beef and grated cream cheese is worth ordering. Another option is the cheese bread ice cream (R$22), served with guava syrup and chestnut crumble.

The franchise that emerged offers an extensive menu with several versions of the delicacy. The cheese bread can come in the form of a waffle, stuffed with turkey breast, mozzarella and cream cheese (R$23.90), a hot dog, in the form of a baguette with smoked sausage, mozzarella cheese and barbecue sauce with guava (R$19.90) or a croissant, stuffed with shredded chicken or beef with arugula (R$23.90 and R$25.90).

At chef Bel Coelho’s café and restaurant, cheese bread is served in waffle form, accompanied by dulce de leche and cream cheese, for R$20. But there is also the classic version of the delicacy, made with Serra da Canastra cheese, for R$10.

Donna

Chef André Mifano’s restaurant serves Italian dishes from São Paulo, but among all the classics of Italian cuisine, there is a very Minas Gerais appetizer. The portion of four fried cheese breads (R$39) is one of the most popular. They are made by dipping and filled with creamy cheese from Serra da Canastra.

Things of Minas Emporium

The stores offer a variety of Minas Gerais delicacies, but the highlight is the fried cheese bread (R$25; four pieces), which comes with chilli sauce or guava paste. In addition to this, there is a section of the menu dedicated to stuffed foods. There are seven combinations, including braised pork, dulce de leche and dried meat with cream cheese.

Minas Gerais Cheese

The chain has nine stores spread throughout the capital of São Paulo and is proud of its cheese bread. One of the highlights is the churros. Although it is not fried, it is filled in the stuffing boxes with a generous layer of Catupiry, dulce de leche or guava paste. Any flavor costs R$15 and you can also order it for home delivery.

Komah Bakery

This Korean-inspired café serves cheese bread stuffed with kimchi, a spicy fermented chard pickle typical of South Korea. The treat is topped with aïoli, a garlic and milk emulsion, and costs R$14.
