Pork with ginger in a bowl with steamed rice, cucumber and herbs

If you want to try a different recipe for minced pork, if you love the aromas of ginger and Asian flavors, the following recipe is easy, light and very different

What you will need for 4 servings:

  • 1 cup long grain rice
  • 1 tbsp oil
  • 500 g minced pork
  • 2 cloves of garlic, finely chopped
  • 1 small red chili (seeded if desired), chopped
  • 2 tbsp plus 1/2 tablespoon grated fresh ginger
  • 2 tbsp soy sauce
  • 4 tbsp fresh lime juice
  • 1 tsp. Brown sugar
  • 1 cucumber, thinly sliced
  • 2 onions, thinly sliced
  • 1 cup fresh coriander
  • 1/2 cup fresh mint leaves

How to make it:

  1. Sauté the minced meat in the oil for about 7 minutes.
  2. Add the garlic, chili and 2 tablespoons of grated fresh ginger.
  3. Lower the heat and pour in 2 tablespoons of lime juice and 1 tablespoon of soy sauce.
  4. Let it simmer for another 5-7 minutes and add a few spoonfuls of hot water if needed.
  5. Lightly stir in 2 tablespoons lime juice, 1 tablespoon soy sauce, 1/2 tablespoon grated ginger, and brown sugar.
  6. Serve in bowls with steamed rice, diced cucumber, onion, cilantro and mint.
