An easy and impressive dish that you can make in less than 30 minutes
What you will need:
- 500 grams of pasta
- 800 grams of tomatoes or one can of whole tomatoes
- 1 tablespoon of olive oil
- 3 cloves of garlic, finely chopped
- ½ teaspoon bukovo
- ¼ cup vodka
- ½ cup raw cashews
- ⅔ cup vegetable stock
- salt and freshly ground pepper
- fresh chopped parsley for serving
How to make it:
- Place the cashews in a large bowl, cover them with water, put them in the fridge to soak overnight. Alternatively, boil them for 10 minutes. Boil the pasta in a large pot of water according to package directions. At the same time, prepare the sauce. Put the tomatoes (including the juice) in a blender and process until smooth.
- Heat the olive oil in a large frying pan over medium heat. Add the garlic and onion and cook for about 1 minute, stirring frequently.
- Stir in the tomatoes and vodka. Bring to a boil, reduce heat and simmer for 10 minutes.
- While the sauce is cooking, prepare the cashew cream. Drain the cashews, add to the blender with vegetable broth and work until the mixture is smooth. Turn off the heat and add the cashew cream to the sauce. Transfer the pasta to the sauce pan.
- Mix well until all the paste is covered with sauce. Taste, add a little salt if needed. Serve with ground pepper and chopped parsley.
