We have the viral salad eaten by Jennifer Aniston every day, for 10 years, on the set of the show Friends! The salad has obviously been tweaked over the years, but the recipe includes a combination of nutrients and fiber from whole grains, onion, extra virgin olive oil, chopped peanuts, crumbled feta, legumes, fresh herbs, lemon and spices. Anyway, it’s so good , which the actress ate every day for 10 years…

You can swap out the oatmeal for quinoa or brown rice and this recipe makes 4 generous servings. If you plan to make it the night before, don’t add the cucumber or pistachios until just before you’re ready to eat.

What you will need:

  • 3.5 cups of cooked oatmeal
  • 2-3 cucumbers, chopped
  • 1/2 cup chopped parsley
  • 1/2 cup chopped mint
  • 1/3 cup chopped onion
  • 1/2 cup chopped pistachios
  • 1 can chickpeas, drained and rinsed
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • Salt Pepper
  • 1/2 cup crumbled feta

How to make it:

Mix all the ingredients together in a bowl and it’s ready.
