What you will need:

  • 2 2/3 cups (350 g) all-purpose flour, sifted
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (150 g) Greek yogurt
  • 1 cup (200g) white granulated sugar
  • 4 eggs
  • 1 teaspoon lime zest
  • 1/2 teaspoon vanilla extract
  • 250 g kiwifruit, peeled and mashed
  • 1/2 cup (120 ml) sunflower oil or any vegetable oil

Lime Syrup:

  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) water
  • 4 tablespoons (60 g) white granulated sugar

How to make it:

  1. Grease a pan with oil and line the bottom with parchment paper. Sprinkle all sides with flour. We leave the pan aside. Preheat the oven to 175°C and place a rack in the middle of the oven.
  2. Mix the flour, baking powder and salt in a medium bowl. In another bowl, whisk together the yogurt, sugar, eggs, lime zest and vanilla.
  3. Mix the flour mixture with the wet ingredients, gently, until the flour is well combined. Then, beat with the pulp from the kiwi. Slowly pour in the oil and mix until the mixture is well combined.
  4. Pour the mixture into the prepared pan and bake for 50-60 minutes, until golden brown and a toothpick comes out clean.
  5. Meanwhile, prepare the lime syrup: Mix the lime juice, water, and sugar in a small saucepan until the sugar dissolves and the mixture is clear, about 5 minutes. We leave aside.
  6. When the cake is baked, let it cool in the pan for 10 minutes. Gently transfer the cake to a wire rack (placed over a sheet) and slowly pour the lime syrup over, trying to cover the top of the cake.
  7. Let the cake cool completely and serve. We can also sprinkle with powdered sugar.
